How to make it

  • Wash rice in several changes of water. Pour over 2pints water and leave to soak for 1/2 hour. Drain in sieve.
  • Combine rice with 1pt water and the spices, herbs and salt. Bring to boil, cover with tight lid and cook on very low heat for 25mins, leave undisturbed for 10mins. Add butter to pan and fork through, remove whole spices before serving.
