Confetti Rice Pilaf

- 2 teaspoons vegetable oil shopping list
- 1 large onion, chopped shopping list
- 2 teaspoons bottled minced garlic shopping list
- 1/4 cup pine nuts shopping list
- 1 chicken boullion cube shopping list
- 1/3 cup frozen yellow corn kernels shopping list
- 1/3 bup frozen peas shopping list
- 2 cups cooked rice shopping list
How to make it
- Cook the rice according to package directions. Set aside.
- Heat the oil in a large skillet over medium heat.
- Peel and chop the onion, adding it to the skillet as you chop.
- Add the garlic and nuts, and crumble the garlic cube into the skillet.
- Cook and stir until the onion and the nuts begin to turn light brown.
- Meanwhile, rinse the corn and peas under cool tap water to begin defrosting. Drain.
- When the nuts and onions are brown, stir in the corn and peas. Cook and stir for 1 minute.
- Add the cooked rice and continue to cook and stir for a minute or so.
- (You may need to add a little more oil to prevent sticking).
- Salt to taste if you like.
- Serve at once.
