How to make it

  • Allow bread bits to set out for several hours to harden a little. Baking them lightly, also works.
  • Preheat oven to 375 degrees F.
  • Grease a baking dish (I use a 9 x 13).
  • In a skillet, melt butter; saute onion, parsley and basil until onion is tender.
  • Add garlic and zucchini, then cook two minutes longer.
  • Remove from the heat; stir in bread bits, egg, cheese, paprika salt and pepper. (Sometimes I find it easier to transfer this mixture to a large bowl to mix more thoroughly)
  • Carefully loosen the skin if chicken on one side to form a pocket. (If using skinless breasts, carefully slice a pocket in one side and out the other.)
  • Stuff each chicken breast with the zucchini mixture then place in the greased baking dish.
  • Bake for 35-45 minutes or until chicken is cooked through.
