Zucchini And Mozzarella Stuffed Chicken Breasts

- 3 tablespoons butter shopping list
- 1 small onion, diced shopping list
- 2 garlic cloves, minced shopping list
- 1 tablespoon fresh parsley, chopped (if using dried, use 1 1/2 tbs) shopping list
- 1/2 teaspoon dried basil shopping list
- 2 medium zucchini, chopped and cubed or shredded shopping list
- 3 slices bread, torn into coarse crumbs shopping list
- 1 egg, beaten shopping list
- 3/4 cup shredded mozzarella cheese shopping list
- 1/2 tablespoon paprika, ground shopping list
- salt and pepper, to taste shopping list
- 4-5 chicken breasts shopping list
How to make it
- Allow bread bits to set out for several hours to harden a little. Baking them lightly, also works.
- Preheat oven to 375 degrees F.
- Grease a baking dish (I use a 9 x 13).
- In a skillet, melt butter; saute onion, parsley and basil until onion is tender.
- Add garlic and zucchini, then cook two minutes longer.
- Remove from the heat; stir in bread bits, egg, cheese, paprika salt and pepper. (Sometimes I find it easier to transfer this mixture to a large bowl to mix more thoroughly)
- Carefully loosen the skin if chicken on one side to form a pocket. (If using skinless breasts, carefully slice a pocket in one side and out the other.)
- Stuff each chicken breast with the zucchini mixture then place in the greased baking dish.
- Bake for 35-45 minutes or until chicken is cooked through.
