Cajun Salmon, Rice Pilaf, Broccoli And Cheese

- 4 oz salmon fillet marinating in olive oil, cayenne pepper, old bay, mustard powder, chili powder, salt and pepper. shopping list
- rice Pilaf - cooked rice in chicken stock with onions, garlic, carrots, celery shopping list

How to make it
- Recipe for 10 portions.
- SALMON Use a 4 oz salmon fillet per portion. In a large bowl place ten 4 oz fillets of salmon. Then add the marinating ingredients (3/4 cup olive oil, 2 TBS cayenne pepper, 2TBS old bay, 1 TBS mustard powder, 1 TBS chili powder, 1 TBS salt and 1 TBS pepper.) Get your hands in there and mix the marinade around the salmon. Then wash your hands and use tongs to place one salmon fillet in individual ziplock bags. RICE PILAF Get 4 cups of water and 4 cups of chicken broth boiling in a large pot. Add 4 cups of white rice. To the water add 10 whole carrots sliced, 2 onions chopped, 8 cloves of galic chopped, 6 celery stalks chopped, salt and pepper. Add 2 pound of broccoli in last above the other ingredients. Cover the lid. The brocoili will steam above the rice. Let the whole mixture boil for 2 minutes and then reduce heat to medium low. When the water is absorbed the rice and broccoli are done. This should take about 15 to 20 minutes. GETTING READY TO SWAP Scoop a cup of rice pilaf into the tin pan. Add a bunch of broccoli and sprinkle chedder cheese over the broccoli. Pair the tin pan with the salmon in the zip lock bag.
