How to make it

  • In a saucepan add olive oil to coat the bottom then heat up the rice to brown. While you have started the rice drain the pineapple and set aside the juice. Measure out 1 cup of the chicken broth and add to the rice. Then add enough chicken broth to the pineapple juice to make the second cup and add to the rice.
  • Pour the rice mixture into a 13x9 baking dish. Add the onion, carrots, bell pepper, pineapple and mix. Add catsup, soy sauce, honey or Karo syrup and I add the left over chicken broth if there is any.
  • Cut up chicken meat and add to the rice mixture. Bake at 375 for 1 hour.
