Chicken Cacciatore

- 1 onion finely diced shopping list
- 2 garlic cloves crushed shopping list
- 1 tbsp olive oil shopping list
- 400 g tin chopped tomatoes shopping list
- 120 g Philadelphia Light with basil (4ProPoints) shopping list
- 4 chicken fillets (3ProPoints per 100g) shopping list
- basil leaves for serving shopping list
- 120g penne (4ProPoints per 40g) shopping list
How to make it
- Heat the oven to 190C/fan 170C/gas 5. Fry the onion and garlic in half the oil until softened but not coloured. Add the tomatoes, season, then simmer for 10 minutes or until thick and glossy. Take off the heat and stir in the Philly.
- Heat a little oil in a pan and fry the chicken on both sides until golden. Transfer to an oven proof dish and pour over the sauce. Cook for 25-30 minutes or until the chicken is cooked through.
- Cook the pasta according to the pack instructions and drain. Once the chicken is cooked serve with the pasta and scatter over the basil leaves.
