Devil's Food Cake

- 3/8 cup shortening shopping list
- 1/4-1 tsp vanilla shopping list
- 1 1/4 cup sugar shopping list
- 2-3 eggs shopping list
- 2 squares chocolate, melted, unsweetened shopping list
- 2 7/8 cups sifted soft-wheat flour shopping list
- 1/2 tsp soda shopping list
- 2 tsp baking powder shopping list
- 1/4-1/2 tsp salt shopping list
- 1 cup sour milk shopping list
How to make it
- Cream shortening until soft; add vanilla and gradually add the sugar, stirring until the mixture is light and fluffy.
- Continue creaming and add egg yolks one at a time.
- Add flour sifted with baking powder and salt and milk alternately, a little at a time. Add the flour first and last. Beat in the dry ingredients and stir in the milk.
- Melt chocolate over warm water, not boiling water; blend into batter.
- Fold in the beaten egg whites which are stiff enough to hold their peaks, but are still moist and shiny in appearance.
- Pour batter into a lightly greased pan.
- For a layer cake bake in a moderate oven (365) for 40-45 minutes.
- For a loaf cake, bake in moderate oven (325) for 40-45 minutes.
