White Nut Cake And Divinity Icing

- 2 2/3 cups sifted cake flour shopping list
- 3 tsp baking powder shopping list
- 1 tsp salt shopping list
- 2/3 cup shortening shopping list
- 1 1/4 cups sugar shopping list
- 1 cup milk shopping list
- 1 tsp vanilla shopping list
- 5 egg whites shopping list
- 1/2 cup sugar shopping list
- 1 cup chopped nuts (pecans or walnuts) shopping list
- Divinity Icing: shopping list
- 1 1/2 cups sugar shopping list
- 6 TBS water shopping list
- 1/8 tsp cream of tartar shopping list
- 2 egg whites, stiffly beaten shopping list
- 1 tsp vanilla shopping list
How to make it
- Cake: Sift flour, once, measure, add baking powder, salt and sift 3 times. Cream shortening, and add 1 1/2 cups sugar gradually, and cream until light and fluffy. Add flour alternately with milk, beating each time until smooth. Add vanilla, and blend. Beat egg whites until foamy and add 1/2 cup sugar gradually, and beat only until mixture holds a soft peak. Beat thoroughly into batter. Add chopped nuts and mix well. Bake in 2 - 9" layer pans lined and greased at 375 for about 30 minutes. Cover with divinity icing and decorate with nut halves.
- Icing: Combine sugar, water, cream of tartar. Cook without stirring to 238 degrees. pour 1/2 of syrup in fine stream over stiffly beaten egg whites, stirring constantly. Cook remainder of syrup to 248 degrees. Pour into icing, beat thoroughly, add flavoring and spread at once.
