Pineapple Beef

For the Rice
- 1 cup uncooked rice. shopping list
- 1/2 cup pineapple juice. shopping list
- 1/2 cup white wine shopping list
- 1 cup water shopping list
The meat and sauce
- 2 TBS olive oil shopping list
- 1 moderate sized bottom round steak shopping list
- spices to taste- creole seasoning, black pepper, garlic salt shopping list
- 1 small can of pineapple chunks in pineapple juice (You may need additional juice. I used a 20oz can but had half of the pineapples left. shopping list
- 1/2 large yellow onion shopping list
- 1/2 large green bell pepper shopping list
- 1/4 cup pineapple juice shopping list
- 1/4 cup white wine shopping list
- 1 cup water shopping list
- 1TBS cornstarch shopping list
How to make it
- Cook rice the way you normally do except substitute pineapple juice and white wine for 1/2 the water.
- While the rice is cooking, cook the meat:
- Add Olive oil to skillet and warm over medium high heat.
- Cut steak into strips and add to olive oil.
- Brown steak.
- Add spices.
- Remove from heat.
- Slice onion and add slices to meat.
- Cut bell pepper into strips and add to meat.
- Add pineapples to meat.
- Combine pineapple juice, white wine and water and add to meat.
- Return skillet to heat.
- Heat until onions and bell peppers are tender.
- Smooth cornstarch by adding about 2 TBS of cold water to it and mixing it until the cornstarch dissolves.
- Add cornstarch mixture to the skillet and stir until blended. Add more water if you need to.
- Bring sauce to a boil.
To serve
- put some rice on a plate and put meat and sauce mixture over it,
