Chicken Vegetable Bean Soup

- 1 cup dry great northern beans shopping list
- 1 large onion, chopped shopping list
- 1 med fennel bulb, trimmed and cut into 1/2" pieces shopping list
- 2 med carrots, choped shopping list
- 2 cloves garlic, minced shopping list
- 2 TBS snipped fresh parsley shopping list
- 1 tsp dried rosemary, crushed shopping list
- 1/4 tsp pepper shopping list
- 4 1/2 cups chicken broth shopping list
- 2 1/2 cups shredded or chopped cooked chicken or turkey shopping list
- 14.5 oz can diced tomatoes shopping list
How to make it
- Rinse beans; drain. In a large saucepan, combine beans and 6 cups water. Bring to boiling; reduce heat. Simmer beans, uncovered, for 10 minutes. Remove from heat. Cover and let stand for 1 hour. Drain and rinse beans.
- Meanwhile, in a 3 1/2, 4 or 5 quart crock pot, combine onion, fennel, carrots, garlic, parsley, rosemary and pepper. Place beans on vegetables. Pour chicken broth over all.
- Cover; cook on low-heat for 8-10 hrs or on high heat for 4-5 hrs.
