Mexican Minestrone

- 2- 15 oz cans black beans, rinsed and drained shopping list
- 2- 14.5 oz cans Mexican style stewed tomatoes, undrained shopping list
- 15 1/4 oz can whole kernel corn, drained shopping list
- 14.5 oz can chicken broth shopping list
- 2 med red-skin potatoes, coarsely chopped shopping list
- 1 cup salsa shopping list
- 1 cup frozen green beans shopping list
- sour cream (optional) shopping list
How to make it
- in a 3 1/2 - 4 quart crock pot, combine the beans, tomatoes, corn, broth, potatoes, salsa and green beans. Cover and cook on high heat for 7-9 hours or until vegetables are tender.
- Top with sour cream, if desired.
