How to make it

  • Preheat oven to 350
  • Stir dry ingredients with a fork
  • Add grated lemon peel
  • In seperate bowl place gradually beat in one cup of sugar with butter , add eggs one at a time once smooth, mix in vanilla
  • Gradually beat in dry mixture in 1/3 increments
  • Spoon into greased or lined muffin tins
  • Bake about 25 mins
  • Squeeze 3 tbsps juice from lemon
  • Stir in 1/4 cup of sugar
  • Remove cupcakes from oven and poke holes in tops , evenly brush half the lemon/sugar mixture over the cupcakes
  • Cool in pan 10 mins, brush remain sugar/lemon mixture on
  • Let cool additonal 10 mins than turn out on pan to fnish cooling
  • For Icing , I Use a blend of cream cheese, honey, vanilla and lemon juice, ratios up to you depending on what flavor you would like to be the strongest , or a little bit of cool whip mixed with lemon juice is good too.
