Sunny Lemon Cupcakes

- 1 2/3 cup of flour shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1 lemon shopping list
- 1/2 cup of butter, room tempature shopping list
- 1 1/4 cup of sugar shopping list
- 2 eggs shopping list
- 1 tsp vanilla shopping list
- 2/3 cup milk shopping list
How to make it
- Preheat oven to 350
- Stir dry ingredients with a fork
- Add grated lemon peel
- In seperate bowl place gradually beat in one cup of sugar with butter , add eggs one at a time once smooth, mix in vanilla
- Gradually beat in dry mixture in 1/3 increments
- Spoon into greased or lined muffin tins
- Bake about 25 mins
- Squeeze 3 tbsps juice from lemon
- Stir in 1/4 cup of sugar
- Remove cupcakes from oven and poke holes in tops , evenly brush half the lemon/sugar mixture over the cupcakes
- Cool in pan 10 mins, brush remain sugar/lemon mixture on
- Let cool additonal 10 mins than turn out on pan to fnish cooling
- For Icing , I Use a blend of cream cheese, honey, vanilla and lemon juice, ratios up to you depending on what flavor you would like to be the strongest , or a little bit of cool whip mixed with lemon juice is good too.
