Creole Tomato Soup

- 1 TB vegetable oil shopping list
- 1 c finely chopped onion,1 c finely chopped celery shopping list
- 1/2 c finely chopped green bell pepper shopping list
- 1 garlic clove, minced shopping list
- 1 (28 oz) can diced tomatoes shopping list
- 1 (14 oz) can chicken broth shopping list
- 1 tsp dried thyme shopping list
- 1/8 tsp cayenne pepper shopping list
- 1 bay leaf shopping list
- 1 (7 oz)link precooked andouille sausage,finely chopped shopping list
- 3 TB half and half or heavy cream shopping list
How to make it
- 1. Heat oil in large saucepan over med. heat till hot. Cook onion,celery,bell pepper,and garlic 5 to 7 mins or till softened,stirring frequently.
- 2. Add tomatoes,broth,thyme,cayenne pepper,and bay leaf;bring to a boil over high heat.
- Reduce heat to med-low;simmer 20 to 25 mins. or till veggies are soft.
- 3. Add sausage;cook 1 min or till heated through. Remove from heat;remove and discard bay leaf. Stir in half and half (do not let mixture boil.
