How to make it

  • Pour 4 cups root beer into 13x9 baking pan; freeze until set, about 4 hours or overnight. (As it is setting, I use the fork tines to scrape into icy flakes.)
  • Meanwhile, boil remaining 4 cups of root beer in a large saucepan until reduced to 1/4 cup, about 30 minutes. Cool root beer syrup.
  • Flake frozen root beer and scoop into serving dish (about 3/4 cup). Top granita with a scoop of ice cream then drizzle each serving with 4 tsp root beer syrup and serve.
