Banana Pancakes

- 1 large egg shopping list
- ¼ cup milk shopping list
- 2 oz banana – mashed shopping list
- 3 Tsp oat bran shopping list
- 6 oz mixed seasonal fresh fruit – cut up into small pieces ie: apple, blueberries, strawberries, mango, passionfruit, apricot, peach etc shopping list
- ½ tsp butter shopping list
- ½ Tsp sliced almonds shopping list
- ¾ cup unsweetened, plain yoghurt or quark shopping list
- cinnamon shopping list
- fresh mint shopping list
How to make it
- In a large bowl, beat egg until pale yellow and fluffy (about 2 minutes).
- Mix in milk, mashed banana and oat bran.
- Melt half the butter in a 9 or 10 inch skillet and heat over medium-low heat.
- Add half of the mixture to the hot pan. Use the back of a spoon to spread the mixture evenly over the bottom.
- Cook until bottom is lightly browned, about 2 minutes, then carefully lift crepe and turn over. Cook until second side is lightly browned, about 2 minutes more.
- Remove from pan and serve with the fruit salad mix, yoghurt and herbs to taste
