How to make it

  • In a large bowl, beat egg until pale yellow and fluffy (about 2 minutes).
  • Mix in milk, mashed banana and oat bran.
  • Melt half the butter in a 9 or 10 inch skillet and heat over medium-low heat.
  • Add half of the mixture to the hot pan. Use the back of a spoon to spread the mixture evenly over the bottom.
  • Cook until bottom is lightly browned, about 2 minutes, then carefully lift crepe and turn over. Cook until second side is lightly browned, about 2 minutes more.
  • Remove from pan and serve with the fruit salad mix, yoghurt and herbs to taste

    Thanks for posting this recipe. I would like to try it but I wanted to confirm it was 3 teaspoons of bran and not 3 tablespoons right? Because we are allowed 3 tablespoons in the program so I just wanted to make sure it wasn't a typo before I made it
