Italian Spring Primavera

- 1 medium zucchini shopping list
- 1 cup broccoli florets shopping list
- 1 cup raw olives, rinsed and sliced shopping list
- ½ cup sundried tomatoes shopping list
- 3 fresh shitake or crimini mushrooms shopping list
- 1 Tablespoon basil, chopped shopping list
- 1 Tablespoon oregano, chopped shopping list
- 1-2 Tablespoons balsamic vinegar shopping list
- olive oil shopping list
- salt and pepper to taste shopping list
- ½ an avocado, thinly sliced shopping list
- 1 red pepper shopping list
How to make it
- If you have one of those handy kitchen gadgets known as a Spiralizer you will use it to make faux pasta from the zucchini. In the event that you don’t have one, you can grate or finely peel the zucchini lengthwise as a suitable substitute. Place zucchini ‘noodles’ in serving bowl.
- Add all remaining ingredients, drizzle with olive oil, toss well and season to taste. Garnish with avocado slices and a few chunks of red pepper.
