Chocolate Covered Cheesecake

crust
- 1 cup graham cracker crumbs shopping list
- 1/4 cup butter, melted shopping list
- 1/3 cup pecans, finely chopped shopping list
cheesecake-filling
- 2) 8 oz pks cream cheese shopping list
- 1/4 cup sour cream shopping list
- 1/2 cup sugar shopping list
- 2 eggs, beaten shopping list
- scant 1 tsp vanilla extract shopping list
chocolate glaze
- 24 oz semisweet chocolate shopping list
- 3 tbl shortening shopping list
- 1/4 tsp vanilla extract shopping list
- 1/3 cup pecans, copped, optional shopping list
How to make it
- Preheat oven to 325 degrees
for the crust
- In a small bowl, combine graham crumbs, melted butter, and pecans until well mixed. Press into a greased 9-inch pie pan, set aside.
for the filling
- In another bowl, beat together cream cheese, sour cream, sugar, eggs, and vanilla until smooth and creamy. Pour mixture into prepared crust. Bake for 30 to 40 minutes. Cool 1 hour on wire rack and refrigerate 1 to 2 hours.
for chocolate glaze
- Place chocolate, shortening, and vanilla in a small saucepan. Cook on low, stirring every 1 minute until smooth. Remove from heat, stir and cool 1 minute. Spread chocolate glaze evenly on top of cheesecake. sprinkle with chopped pecans and allow to set, about 30 minutes. Keep chilled.
