Queen Victoria's Favorite Soup

- 1 quart chicken broth shopping list
- 1 onion, finely chopped shopping list
- 1 cup celery diced shopping list
- 1 TBS butter shopping list
- salt and pepper, to taste shopping list
- 2 hard-boiled eggs, finely chopped shopping list
- 1/2 cup cracker crumbs shopping list
- 1 cup cooked white chicken meat, finely chopped shopping list
- 2 cups light cream shopping list
- 1/2 tsp sage (or 1 tsp fresh) shopping list
- chopped parsley (for garnish) shopping list
How to make it
- Simmer first 5 ingredients for 15 minutes in a large soup pot.
- Mix the next 5 ingredients in a bowl, and let soak until the broth has cooked for the 15 minutes. Then stir in this mixture into the broth. Bring to a boil, stirring constantly.
- Serve in hot soup bowls and garnish with parsley.
- This is great served with lettuce sandwiches and a fruit dessert.
