How to make it

  • Clean meat & put into large stock pot with garlic & salt & pepper & boil it for about 3 hours until meat is tender. Add tomato sauce 1 small can, more garlic, red chili pack small or half to a quarter of med bag, depending how hot you want it, stir then add parsley & oregano & boil another 2 hours. Slice up lemon slices, And dice onions, Put in frig. until Menudo Is done. toast corn tortillas on a cast iron griddle or a comile`.Sometimes the Menudo can take 4-5 hours depending on cook & temp & elevation of where you live. When Menudo is done, serve in large soup bowls with diced onions & slice lemons in a small bowl on the side of soup bowl for flavoring you can add to your own dish ,And corn tortillas on side on a saucer or tortilla bowl w/lid.
