Saucy Meatloaf

- 1/2 cup coconut flour shopping list
- 3 egg shopping list
- 1 cup onions shopping list
- 1 jalapeno pepper shopping list
- 1 cup Baby Bella mushrooms shopping list
- 1 cup parsley shopping list
- 1 tsp Real Iodized salt shopping list
- 1/2 tsp pepper, Black shopping list
- 2 tbsp Fresh oregano shopping list
- 1 tsp garlic powder shopping list
- 3 tomatoes shopping list
- 1 lb ground beef (80/20) shopping list
- 1/2 cup tomato And basil Marinara shopping list
- 1 tbsp horseradish shopping list
- 1/2 cup beef gravy (canned) shopping list
How to make it
- Preheat oven to 350
- Blanch, peel then dice the tomatoes. Mince the mushrooms, onion and pepper.
- Combine coconut flour, eggs, pureed tomatoes, chopped onion, jalapeno, mushrooms, parsley, oregano, salt, black pepper, thyme and garlic powder in a bowl. Add ground beef and mix well.
- Whisk together the marinara, horseradish, beef gravy (canned I used Campbells) and 1 tbsp coconut flour.
- Shape beef mixture into a loaf and place in a baking dish See Photo. Pour the marinara mixture over the top of the loaf.
- Bake at 350F for 1ΒΌ hours. Makes 6 to 8 servings.

All assembled and ready for the oven. Meatloaf is one of those wonderful things that is just happy to sit all day in the refrigerator until you are good and ready to bake it.
