How to make it

  • 1 Preheat oven to 180°C
  • 2 Heat 1 Tbsp (15ml) butter, canned apples, reserved liquid, mixed spice and raisins in a pan until mixture thickens
  • 3 Spoon into a 900ml ovenproof dish about 5cm deep
  • 4 Cream remaining butter and castor sugar together until light and fluffy
  • 5 Fold flour and egg in alternate spoonfuls with creamed butter until blended
  • 6 Spoon mixture over apples and bake for 30-35 minutes or until puffed up and golden
  • Serve with a dollop of yoghurt, cream or vanilla custard
  • Great idea; Add a splash of booze, like brandy, when cooking apples
