Apple Sponge Pudding

- 80 ml butter shopping list
- 1 can apple, (765g), drained, 2 tbsp liquid reserved shopping list
- 1 tsp mixed spice shopping list
- 60 ml seedless raisins shopping list
- 100 grams castor sugar shopping list
- 100 grams self raising flour, sifted shopping list
- 2 extra large eggs, whisked shopping list
How to make it
- 1 Preheat oven to 180°C
- 2 Heat 1 Tbsp (15ml) butter, canned apples, reserved liquid, mixed spice and raisins in a pan until mixture thickens
- 3 Spoon into a 900ml ovenproof dish about 5cm deep
- 4 Cream remaining butter and castor sugar together until light and fluffy
- 5 Fold flour and egg in alternate spoonfuls with creamed butter until blended
- 6 Spoon mixture over apples and bake for 30-35 minutes or until puffed up and golden
- Serve with a dollop of yoghurt, cream or vanilla custard
- Great idea; Add a splash of booze, like brandy, when cooking apples
