Oatmeal And Raisin Biscotti

- 2 cups flour shopping list
- 3/4 cup rolled oats shopping list
- 1 Tablespoon cinnamon(I use Saigon) shopping list
- 1 teaspoon nutmeg shopping list
- 1/2 t. ginger shopping list
- 1/2 t. salt shopping list
- 3 eggs, room temperature shopping list
- 3/4 cup sugar (I use brown sugar) shopping list
- 1/2 t. almond extract shopping list
- 1 1/2 t. vanilla extract shopping list
- 1/2 cup raisins or currants shopping list
- 1/3 cup walnuts, hazelnuts,or sunflower seeds or combination shopping list
How to make it
- Combine all the dry ingredients, except the nuts and raisins, and mix together well. Set aside.
- In a large bowl, mix the sugar and eggs for 5 minutes beating with an electric mixer. Add the vanilla and almond. Stir the dry into the wet, and then stir in the nuts and raisins. Let the dough rest for 5 minutes.
- Parchment paper of silpat on baking sheet. Prepeat oven 325.
- Have a shallow bowl of water and a flat spatula to shape the log. (I find water works a lot better than flour) I place the dough directly on the parchment paper in a roughly straight line or lines, and form 2 logs 11 inches by 3 to 4 inches wide. Bake 30-40 mins. (I take these out at about 30 mins, for slicing. The edges do not crack as much when not baked so much. Using serrated knife, slice diagonally in 1/2 inch pieces, and lay flat on baking sheet. Bake at 275 for 10-15 minutes; turn over and bake other side the same.
