How to make it

  • Part 1:
  • Over med heat, in large stock pot, heat oil and saute garlic for 60 sec.
  • Add onions and sauté 4-5 min.
  • Add celery, carrots, ¼ c of broth and cook 2 minutes more.
  • ** The ¼ c of broth are taken from the 3 cans in Step 2.
  • Part 2:
  • Add ingredients and bring to boil stirring frequently.
  • Part 3:
  • Reduce heat to low, add ingredients then simmer for 4 hr minimum, 5-6 hr better.
  • Part 4:
  • Add cooked pasta 1-2 hrs before finished cooking. **Pasta absorbs the juices, which is why I cook them separately (they won’t absorb as much) then add to soup.
  • Garnish:
  • Ladle soup and sprinkle Parmesan cheese on top.
