Minestrone Kitchen Sink Soup (Vinnie's)

- 2 T olive oil shopping list
- 4 cloves garlic, minced shopping list
- 2 c yellow onions, chopped shopping list
- 2 c chopped celery (8-9 stalks) shopping list
- 1 ¼ c baby carrots, sliced shopping list
- Part 2: shopping list
- 3 15oz cans beef broth shopping list
- 2 15oz cans tomato sauce shopping list
- 3 c water shopping list
- 1.5 oz Demi Glace (1 T heaping) shopping list
- 1 ½ t Tabasco sauce shopping list
- 1 t Worstershire sauce shopping list
- 2 oz Red cooking wine shopping list
- Part 3: shopping list
- 1 c red potato, Peeled & cubed shopping list
- 2 14.5oz cans diced tomatoes “Hunts Balsamic n Olive oil” shopping list
- 15 oz roasted tomatoes (my wife has a good one) shopping list
- 14 oz can garbanzo beans, Drained shopping list
- 14 oz can kidney beans, Drained shopping list
- 1 c Italian green beans 1” cuts shopping list
- 1 c 16 Bean Dried Soup mix shopping list
- 12 spinach leaves, rinsed/chopped shopping list
- 1 zucchini, quartered and sliced shopping list
- 1 T oregano (4 stems) (fresh) shopping list
- 3-4 Lg basil leaves chopped (fresh) shopping list
- 2 T minced parsley (fresh) shopping list
- ½ t thyme (dried) shopping list
- ½ t marjoram (dried) shopping list
- ½ t crushed bay leaves (dried) shopping list
- ½ t pepper shopping list
- Part 4: shopping list
- 1c Wheat seashell pasta, cooked separately then added ¾ way through cooking. shopping list
- Garnish: shopping list
- 2 T grated parmesan cheese for topping shopping list
How to make it
- Part 1:
- Over med heat, in large stock pot, heat oil and saute garlic for 60 sec.
- Add onions and sauté 4-5 min.
- Add celery, carrots, ¼ c of broth and cook 2 minutes more.
- ** The ¼ c of broth are taken from the 3 cans in Step 2.
- Part 2:
- Add ingredients and bring to boil stirring frequently.
- Part 3:
- Reduce heat to low, add ingredients then simmer for 4 hr minimum, 5-6 hr better.
- Part 4:
- Add cooked pasta 1-2 hrs before finished cooking. **Pasta absorbs the juices, which is why I cook them separately (they won’t absorb as much) then add to soup.
- Garnish:
- Ladle soup and sprinkle Parmesan cheese on top.
