Black Bean Veggie Chili

- 1 medium onion, chopped shopping list
- 1 large zucchini, chopped or julienned shopping list
- 3 carrots, sliced into 1/4 inch pieces shopping list
- 2 celery stalks, sliced into 1/4 inch pieces shopping list
- 2 28-ounce cans of stewed Italian tomatoes shopping list
- 1/2 cup chopped pineapple shopping list
- 2 15.5 ounce cans black beans, drained and rinsed shopping list
- 3 Tbs chili powder shopping list
- 2 tsp ground cumin shopping list
How to make it
- Combine all ingredients in a large saucepan over medium-low heat. Use your stirring spoon to lightly crush the stewed tomatoes. Bring to a simmer and cook for 30 minutes, uncovered, stirring occasionally.
