How to make it

  • 1. Place caramels and evaporated milk in a heavy saucepan. Heat over medium-low heat, stirring continually, until smooth, about 5 minutes.
  • 2. Stir in 1/2 cup chopped pecans.
  • 3. Pour into pie crust.
  • 4. Combine cream cheese, sour cream, and milk in a blender. Process until smooth.
  • 5. Add pudding mix; process for about 30 seconds longer.
  • 6. Pour pudding mixture over the caramel layer. Chill, loosely covered, until set, about 15 minutes.
  • 7. Drizzle fudge topping (or substitute caramel) over the pudding layer in a decorative pattern. Sprinkle pecans over the top. Chill, loosely covered, until serving time.

    Hints: Nuts are easier to chop when they are warm. Heat in the microwave on HIGH for 2 min or in a 325 degree over for 5 minutes. (I actually usually buy mine pre-chopped.)

    Put fudge topping in a resealable plastic bag (ziplock works great) snip off the corner of the bag, and pipe the topping over the pudding layer.
