How to make it

  • Place curry paste, shrimp paste, coconut milk, fish sauce, sugar, (if using shrimp and fish add later, if using beef or chicken add now)cinnamon and cardamom in a large saucepan and mix to combine. Bring to simmer over medium heat and simmer stirring occasionally uncovered for 40 mins or until meat is tender.If using fish or seafood add after it has simmered for about 30 mins so as not to overcook...especially shrimp.
  • After the fish or seafood or meat is cooked add the tamarind mixture and cook for 5 mins longer.Remove cinnamon sticks and cardamom seeds before serving.
  • We serve this ladled over jasmine rice!!
  • Enjoy!!
