Chicken And Chorizo Hotpot

- 4 chicken thighs shopping list
- 1 fresh chorizo or spicy Italian sausage, cut in 1cm pieces shopping list
- 1 garlic clove, crushed shopping list
- 1/2 onion, thinly sliced shopping list
- 1 red and 1 yellow capsicum, cut in thick slices shopping list
- 450g can Italian tomatoes, roughly chopped shopping list
- 1/4 cup white wine shopping list
- salt and pepper shopping list
- 3-4 fresh bay leaves shopping list
- Small handful black olives (optional) shopping list
- 3 tbsp extra virgin shopping list
- olive oil shopping list
- crusty bread shopping list
How to make it
- Pre-heat oven to 200C.
- Add chicken thighs, chorizo, garlic, onion, capsicum, tomato and white wine to the baking dish.
- Season with salt and pepper, toss to mix but arrange chicken pieces skin side up.
- Add the bay leaves and olives and drizzle over the extra virgin olive oil. Cook in the oven for 1 1/2 hours.
- Serve with crusty bread or polenta.
