How to make it

  • Preheat oven to 450 degrees
  • generously butter a 9 inch springform pan (bottom and sides)
  • melt 1/4 cup (1 stick) butter in mixing bowl
  • add 1 cup crushed chocolate cookies and mix well.
  • spread chocolate crust onto bottom of springform pan.
  • (crush cookies with food processor or rolling pin in a plastic bag)
  • In a mixing bowl, beat cream cheese and sugar until blended.
  • add sour cream and vanilla
  • beat in cocoa and flour
  • add eggs one at a time
  • beat until gently blended
  • pour into crust
  • Bake 10 minutes
  • Reduce heat to 250 degrees
  • continue baking for 40 minutes
  • cheesecake may be a little wobbly in the middle, but not undercooked
  • gently slide a knife around the edges of cheesecake and cool completely
  • remove sides of springform pan
  • place 1/2 cup semi sweet chocolate chips and 2 teaspoons vegetable shortening into a small microwave safe bowl.
  • microwave until chocolate is melted.
  • drizzle chocolate on top of cheesecake with a fork or spoon.
  • Refrigerate 4-6 hours
  • keep stored in refrigerator
