  • In a large bowl, combine all of the meatloaf ingredients. Use your hands if necessary, it needs to be thoroughly mixed. Then pat into the bottom of a 10 inch non stick skillet..(.or a foil lined regular skillet)

  • Cover. Cook over medium heat between 20-30 minutes. While cooking, mix together all of the topping ingredients, stirring with a whisk until brown sugar is dissolved. Set aside.

  • Spoon off excess grease if necessary. Then pour topping over the meatloaf and cover. Continue to cook until center is no longer pink...20-30 minutes (the timing here is real iffy, because it really does make a difference on the weight of your skillet and your stove settings. It comes out different depending on which pan I use.) Use a meat thermometer and check that is at least 160.

  • If your skillet is oven proof you can put in preheated 350 degree oven for 5-10 minutes to crisp up the top if you want...most of the time I don't.
