Spinach Mushroom Toss

- 1/4 c tarragon, red wine vinegar, or rice vinegar shopping list
- 3/4 tsp salt shopping list
- 1 sm clove garlic, crushed shopping list
- 1 generous dash(es) freshly ground pepper shopping list
- 8 oz mushrooms, sliced (about 3 cups) shopping list
- 16 oz spinach, torn into bite size pieces (i use baby spinach) shopping list
- 1/4 c olive or vegatabe oil shopping list
- 1-2 Tbsp sugar shopping list
How to make it
- 1
- Mix vinegar, salt, garlic and pepper; toss with mushrooms and let stand 15 minutes.

- Toss spinach and oil until leaves glisten. Toss mushroom mixture with spinach. (I sometimes add sliced strawberries)
