How to make it

  • Heat oven to 350 degrees. Combine bananas, vanilla and coconut oil in a bowl and set aside. In another bowl, whisk together oats, almond meal, shredded coconut, cinnamon and salt. Add dry ingredients to wet and stir until combined. Stir in chocolate chips, if desired. Drop tablespoonfuls of dough about 1 inch apart onto a baking sheet lined with parchment paper.
