Jamaican Scotch Bonnet Shrimp

- 2oz unsalted butter shopping list
- 1 large onion, diced shopping list
- 1 green bell pepper, deseeded and thinly sliced shopping list
- 1-2 scotch bonnet or jalepeno chilies, deseeded and minced shopping list
- 1 clove garlic, minced shopping list
- 4 ripe tomatoes, diced shopping list
- 1 tablespoon fresh lime juice shopping list
- 1 bay leaf shopping list
- 1 teaspoon minced fresh parsley shopping list
- 1/2 teaspoon sugar (can substitute 1/3 teaspoon agave nectar) shopping list
- Salt and freshly ground black pepper (to taste) shopping list
- 1 teaspoon worcestershire sauce shopping list
- 1 teaspoon Pickapeppa Sauce or steak sauce shopping list
- 1 1/2lbs medium shrimp, peeled and deveined shopping list
How to make it
- Melt the butter in a large skillet over medium heat and add the onion, bell pepper, chilies, and garlic.
- Saute until the vegetables are tender but not browned (about 5 minutes).
- Add the tomato, lime juice, bay leaf, parsley, and sugar. Season with salt and pepper, and mix well.
- Simmer, uncovered, until the sauce is slightly reduced (about 5 minutes).
- Remove the bay leaf and stir in the Worcestershire sauce and Pickapeppa sauce..
- Add the shrimp and cook until they turn pink (about 3 minutes).
- Serve with rice or boiled flour dumplings.
