How to make it

  • Pat the filets dry with paper towels.
  • Dredge the filets in the flour and let sit 5 to 10 minutes until the flour on the filets is sticky.
  • In a separate bowl, combine the egg and honey and mix thoroughly.
  • In another bowl, combine the almonds, 2 Tbsp flour and a few pinches of salt and pepper.
  • Dredge the filets again in the flour, then in the egg mixture and finally in the almond mixture until fully coated.
  • Heat the butter and olive oil in the saute pan over medium to medium-high heat.
  • Pan fry the filets until fully cooked. (About 3 to 5 minutes each side, depending on the thickness of the filets.)
  • Move to a plate lined with paper towels to allow extra oil and butter to drain off.
