Clementine And Raspberry Chicken

- 5 clementine oranges shopping list
- 2 tablespoons soy sauce shopping list
- 1.5 tablespoons raspberry wine vinegar shopping list
- 1 teaspoon brown sugar shopping list
- 1/4 teaspoon ground ginger shopping list
- Dash of nutmeg shopping list
- 1/2 tablespoon cornstarch shopping list
- 2 tablespoons vegetable oil shopping list
- 2 garlic cloves, peeled and minced or 1/2 a teaspoon minced garlic shopping list
- 1/8 teaspoon crushed red pepper flakes shopping list
- 1 pound of boneless chicken shopping list
- A small handful of dried cranberries shopping list
How to make it
- Peel 2 of the clementine oranges and divide into segments. Set aside.
- Peel the remaining oranges and squeeze the juice to make 1/3 cup.
- Add the soy sauce vinegar brown sugar, ginger, nutmeg and cornstarch to the orange juice. Stir well. Set aside.
- Heat the oil in a large skillet or wok over medium-high heat.
- Add the minced garlic, chopped dried cranberries and crushed red pepper flakes to the hot oil. saute for 30 seconds.
- Pour orange juice mixture into the skillet or wok and stir.
- Add the chicken (pre-cooked how ever you like grilled, fried, ect.) and stir-fry for 2-4 minutes.
- Cook, stirring constantly, until sauce is thick and bubbly, (about 1 minute.)
- Remove from heat and stir in the clementine orange segments.
