Tomato Phyllo Pizza

- 5 T. butter, melted ( I used 2 T. and sprayed Pam 3 one-second times into the melted butter) shopping list
- 14 sheets phyllo (9 X 14") shopping list
- 7 T. parmesan grated shopping list
- 2 tsp. italian seasoning (basil, oregano, thyme, fennel, garlic) shopping list
- 1 cup mozzarella , grated ( i used galaxy rice or soy cheese--it melted beautifully--goo-ily under the tomatoes) shopping list
- fresh basil , 5-10 leaves, torn in little pieces shopping list
- 1 cup thinly sliced onion shopping list
- 1 lb. tomatoes sliced (I used heirlooms) shopping list
- 3 cloves garlic, minced shopping list
How to make it
- Preheat oven to 375
- Combine parmesan and dry seasonings together in a small bowl.
- Recipe calls for 10X15X1" pan, I used a 9 inch round pie pan, glass
- Lightly brush bottom of pan with butter . I laid the phyllo in the center of the pan, and spread lightly with the butter and sprinkle 1 T. parmesan/spice mix . Do this for 5 layers.
- Now spread the mozzarella all over the crust. Lay the tomato slices on top, with fresh basil here and there. Place onion slices all over tomatoes. Chopped garlic can go on top, and now the parmesan over all. Into hot oven , and 25 minutes later, enjoy.
