Middle Eastern Rice Stuffing

- 2 tablespoons olive oil shopping list
- 1 cup chopped onions shopping list
- 1 tablespoon minced garlic shopping list
- 1/2 teaspoon ground cumin shopping list
- 1/2 teaspoon ground coriander shopping list
- 1/2 teaspoon ground turmeric shopping list
- 1/2 teaspoon sweet paprika shopping list
- 1/2 teaspoon ground ginger shopping list
- 1/2 teaspoon ground black pepper shopping list
- 1/4 teaspoon salt shopping list
- 1 cup medium-grain rice shopping list
- 1 1/2 cups chicken stock shopping list
- 1/4 cup golden raisins shopping list
- 1/4 cup diced pitted prunes shopping list
- 1/4 cup silvered blanched almonds, toasted shopping list
- 1 teaspoon grated lemon zest shopping list
- 2 tablespoons fresh lemon juice shopping list
- 1 large egg, lightly beaten shopping list
How to make it
- Heat over medium heat in a large skillet:
- 2 tablespoons olive oil
- Add and stir until tender (about 5 minutes):
- 1 cup chopped onions
- Add and stir until well coated:
- 1 tablespoon minced garlic
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1 cup medium-grain rice
- Add and bring to a simmer:
- 1 1/2 cups chicken stock
- Reduce the heat to low, cover, and simmer until the rice is cooked (about 20 minutes).
- Turn the mixture into a large bowl, let cool slightly, and add:
- 1/4 cup golden raisins
- 1/4 cup diced pitted prunes
- 1/4 cup silvered blanched almonds, toasted
- 1 teaspoon grated lemon zest
- 2 tablespoons fresh lemon juice
- 1 large egg, lightly beaten
- Adjust the seasoning to taste and:
- 1) use as a stuffing or
- 2) turn into a large, shallow buttered baking dish, cover, and bake at 350 F until the flavors are blended and the stuffing is hot (about 20-30 minutes).
