How to make it

  • Heat over medium heat in a large skillet:
  • 2 tablespoons olive oil
  • Add and stir until tender (about 5 minutes):
  • 1 cup chopped onions
  • Add and stir until well coated:
  • 1 tablespoon minced garlic
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 cup medium-grain rice
  • Add and bring to a simmer:
  • 1 1/2 cups chicken stock
  • Reduce the heat to low, cover, and simmer until the rice is cooked (about 20 minutes).
  • Turn the mixture into a large bowl, let cool slightly, and add:
  • 1/4 cup golden raisins
  • 1/4 cup diced pitted prunes
  • 1/4 cup silvered blanched almonds, toasted
  • 1 teaspoon grated lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 large egg, lightly beaten
  • Adjust the seasoning to taste and:
  • 1) use as a stuffing or
  • 2) turn into a large, shallow buttered baking dish, cover, and bake at 350 F until the flavors are blended and the stuffing is hot (about 20-30 minutes).
