Chicken Gumbo

- 1 tbsp sunflower oil shopping list
- 1 onion, chopped shopping list
- 2 celery sticks, chopped shopping list
- 1 green pepper, de-seeded and chopped shopping list
- 1 garlic clove, chopped shopping list
- 450g boneless skinless chicken breasts, cubed shopping list
- 1/2 tsp dried oregano shopping list
- 1tsp paprika shopping list
- 1/2 tsp cumin shopping list
- 1 tbsp plain flour shopping list
- 115g chorizo, sliced shopping list
- 400g can chopped tomatoes shopping list
- 450ml chicken stock shopping list
- 225g baby courgettes, sliced shopping list
How to make it
- 1) heat the oil in a large casserole pot and fry the onion, celery, and pepper over a medium heat for five minutes, or until softened, stirring frequently. Add the garlic and fry for a few seconds.
- 2) Add the chicken and fry, turning, until evenly browned. Sprinkle with oregano, paprika,cumin, and flour. stir well and cook for 1 min, then add the sausage, tomatoes and stock.
- 3) Bring to the boil, stirring frequently, then reduce the heat and simmer for 20 min. Add the courgettes , return to the simmer, and let cook for a further 20 min.
