How to make it
- 1) Bring stock to boil and add the pasta. cook until the pasta is done.
- 2) In a small bowl mix together the eggs, nutmeg, a pinch of salt and pepper. Add the parmesan and parsley.
- 3) Add 1 tbsp of the olive oil to the simmering stock. Reduce the heat, stir the stock and create a whirlpool. Gradually pour in the egg mixture, do not let the soup boil so the egg can set in strands. leave to stand for 1min then serve with crusty bread.
