Red Lentil Bolognese

- 1 tbsp olive oil shopping list
- 1 onion, finely chopped shopping list
- 2 celery sticks, finely chopped shopping list
- 2 carrots, finely chopped shopping list
- 2 cloves garlic, crushed shopping list
- 1/4 cup dried split red lentils shopping list
- 1 x 14.5 oz can chopped tomatoes shopping list
- 2 cups vegetable stock shopping list
- 2 tbsp tomato paste shopping list
- dried pasta (at least 1 cup) shopping list
How to make it
- Heat oil in large saucepan over medium heat.
- Add onion, celery, carrot and garlic, cook, stirring until vegetables soften. Stir in lentils, tomatoes, stock and tomato paste.
- Increase heat to medium-high and bring to the boil.
- Reduce heat to medium.
- Simmer, for 20 minutes until mixture thickens.
- Cook pasta, drain and return to pot.
- Add sauce to pasta and stir through.
