- 1 1/2 pounds of hamburger meat shopping list
- 1 package of McCormick taco seasoning mix. I use HOT shopping list
- 2 cans of refried beans shopping list
- 2 tablespoons of your favorite salsa (optional) shopping list
- 2 pounds of shredded colby/jack cheese shopping list
- 1 can (approx 16oz) of red enchilada sauce shopping list
- 1 package (6-12) of large flour tortillas shopping list
How to make it
- Brown the hamburger, drain.
- Add the taco seasoning packet and 3/4 cups of water to the meat. Simmer until the water is absorbed. Remove from heat.
- Open cans of refried beans and add 3/4 cup of milk and salsa if you choose to use it. Mix well.
- Set up an assembly of tortilla, beans, meat, cheese and large baking pan/dish sprayed with Pam. Pour enough enchilada sauce on the bottom of the dish to coat it.
- Take about 3 tablespoons of beans and spread on open flour tortilla. On top of the beans spoon on about 3-4 tablespoons of taco meat. Then take a pinch of cheese (approx. 3-4 tablespoons) and place on top of the beans/meat. Fold tortilla sides in and roll up like a burrito.
- Arrange in the dish and finish assembling until no more tortillas are left or you run out of fillings.
- Pour enchilada sauce over the burritos and cover them with cheese. Spray aluminum foil with non-stick spray and cover the dish. Bake at 400 degrees for about 45 minutes. Serve with Sour cream, tomatoes, whatever you like to top your enchiladas with.
