Chicken Corn Fritters

- 1 can whole kernel corn, drained or a 16 oz bag of frozen corn defrosted shopping list
- 2 cups cooked (boiled for 20 mins) diced boneless skinless chicken breasts. Approx 3 chicken breasts. shopping list
- 1 egg lightly beaten shopping list
- 1/2 cup milk shopping list
- 2 tablespoons melted butter shopping list
- 1/2 teaspoon salt shopping list
- 1/2 taspoon pepper shopping list
- 1 3/4 cups of all-purpose flour shopping list
- 1 teaspoon baking powder shopping list
- Oil for deep frying. I use a fry daddy 3/4 full of oil. vegetable shopping list
- If you like green chile - add a small can of your favorite or 3-4 tablespoons of diced fresh chile. shopping list
- [Green Chile Gravy] - Sauce. Make before you start frying. Double for extra gravy/sauce. shopping list
- 1/3 cup butter shopping list
- 1/4 cup all purpose flour shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon garlic powder shopping list
- 1/8 teaspoon cumin shopping list
- 1 can (4oz) green chilies/chopped - or fresh green chile shopping list
- 1 cup milk shopping list
How to make it
- FRITTERS
- Place corn into a bowl; lightly crush with a potato masher if desired.
- Stir in the chicken, egg, milk, butter, salt and pepper. Combine flour and baking powder in a separate bowl then add into corn mixture until combined.
- In a deep fat fryer heat the oil to approx 375 degres. Drop batter by 1/2 cupfuls into the oil. Fry for 3-5 minutes on each side or until golden brown. Drain on paper towels.
- SAUCE
- In a saucepan, melt butter over medium-low heat. Stir in flour and seasonings until smooth. Add chilies. Gradually stir in milk. Bring to a boil, cook and stir for 2 minutes until thick.
