Veggie Turkey Meat Loaf

- 1/4 teaspoon canola oil shopping list
- 1/4 teaspoon chopped garlic shopping list
- 1/4 cup each finely diced carrots, red bell pepper, onion and mushrooms shopping list
- A dash of salt and fresh ground pepper shopping list
- 1 lb. 90 percent lean ground turkey or chicken shopping list
- 1/4 cup shredded Parmesan shopping list
- 1/4 cup low-sodium chicken broth shopping list
- 1 Large egg shopping list
- 1 diced Chipotle pepper in adobo sauce shopping list
- 1 cup cooked barely shopping list
- 2 cups packed spinach leaves, steamed, drained and chopped shopping list

How to make it
- Preheat oven to 350 F. Heat oil in a saute' pan over medium heat. Add garlic, Chipotle pepper and all vegetables, except spinach and saute' for 4 minutes. Sprinkle with salt and pepper
- In a large bowl, break up ground turkey/chicken well with your hands. Stir in cooked vegetables, Parmesan, broth and egg. Add barley and mix. Add spinach and mix again. Season with salt and pepper
- Coat a baking dish with cooking spray. Place meat/veggie mixture into dish. Back 40 minutes or until internal temperature reaches 140 F.
