Crazy Good Cran-apple Crumble

- 1 Lb raw cranberries shopping list
- 5 med gala apples, cored, sliced & cut into 1/2" cubes (skins on) shopping list
- 1/2 c agave syrup shopping list
- 1/2 c firmly packed light brown sugar shopping list
- 1/4 tsp pumpkin pie spice shopping list
- 1/4 tsp ground cloves shopping list
- 1/4 tsp ground ginger shopping list
- 1 tsp cinnamon shopping list
- 1/4 c water shopping list

- 1c quick cooking oats shopping list
- 6-8 ginger snap cookies shopping list
- 2 tbs vegan margarine (I use Earth Balance) melted shopping list
- 1c light brown sugar shopping list
How to make it
- Place cranberries and sugars in a 3 qt saucepan. Heat on medium 'till cranberries pop. Add apples and remaining ingredients and cook until apples are tender, stirring occasionally, 45 minutes.
- Taste for spices and sweetness and adjust if necessary.
- Process cookies in food processor 'till fine crumbs. Add oats, margarine and sugar and process until mixed.
- Put cooked fruit into 3 qt ovenproof cassarole dish which has been sprayed lightly with vegetable cooking spray.
- Place topping evenly over fruit and bake for 30-45 minutes, 'till bubbly.
- Serve with non dairy ice cream or non dairy whipped cream.
