Old Fashioned Beef Stew

- 2 tsp each -pepper, garlic powder, onion powder, Season-All salt 3 tbsp all purpose flour 3 tbsp extra virgin olive oil 1/2 c onion diced 2 c sliced carrot 2 c diced potatoes 1 can sweet peas water 3 tsp corn starch (optional) 6 c cooked rice 2 lbs of beef cubed into bite size pieces shopping list
How to make it
- Cube 2 lbs of beef to bite size pieces, sprinkle spices( 2 tsp each of pepper, garlic powder, onion powder and Morton's season all salt) and 3 tbsp flour into bowl of meat, toss to coat meat thoroughly. In skillet, brown meat in 3 tbsp of Extra Virgin Olive Oil over medium heat in small batches, placing in stew pot once browned. Add 2 c water to skillet to remove all drippings from meat, add this to the meat in stew pot for extra seasoning. Now brown the 1/2 c onion in skillet and add to stew pot. Add 3 cups of water to stew pot and simmer uncovered till meat is tender (about 45 minutes to 1 &1/2 hrs depending on cube sizes). Add 3 C water, 2 c sliced carrots, and 2 cups diced potatoes, and simmer till tender. To thicken ladle 2 cups of juice out of pot add 3 tsp corn starch, whisk till dissolved, add back to pot. Add 1 can sweet peas, simmer about 5 minutes. Let stand while you cook rice. Serve over rice and enjoy.
