Pan Tilapia With Asparagus

- 2 - red potatoes (chopped small) shopping list
- 1 bunch of asparagus shopping list
- 1/3 of red onion (chopped in medium cuts) shopping list
- Handful of grape tomatoes shopping list
- lemon juice shopping list
- 1 - garlic clove chopped shopping list
- 2 - tablespoons of olive oil shopping list
- salt and pepper shopping list
- all-seasoning salt shopping list
- butter (spray is best) shopping list
- white wine shopping list
How to make it
- You will need two pans for this recipe:
- In first pan heat 1 tablespoon of olive oil. Once heated, add 2/3 of chopped garlic on medium heat. Stir often until brown.
- Cut asparagus in half width wise. Place top part of asparagus in pan with garlic. Spray butter on top and stir often.
- Add potatoes, onion, grape tomatoes, about 4 tablespoons of white wine, then sprinkle with S&P. Again stir often. Once the potatoes are soft, the sides are done.
- Heat other pan with olive oil and last of garlic. Keep heat at medium. Add tilapia once garlic has brown. Pour a little lemon juice and wine in pan. Then season with S&P as well as all seasoning. Flip until brown on both sides.
- Plate with asparagus on bottom, then fish, then rest of mixture.
