How to make it

  • Heat the olive oil in a large skillet over a medium heat. Add the onion, cook until golden, about 10 minutes. Add garlic, cook another minute, or two.
  • Add water, bullion and lentils. Bring to a boil, then reduce heat, cover and cook for about 30 minutes, or until lentils are soft.
  • Cook spinach according to package directions. Add cooked spinach, cumin and salt to lentil mixture. Cook until everything is warmed through. Add cracked pepper to taste.
  • Serve over rice.
