Lentils And Spinach

- 1- 2 tablespoons oil shopping list
- 1 onion, sliced and cut into 1/2 rings shopping list
- 2-4 cloves garlic, minced shopping list
- 10 oz package frozen spinach shopping list
- 1 cup lentils shopping list
- 2 cups water shopping list
- 1 vegan bullion cube shopping list
- 1 tsp salt shopping list
- 1 tsp cumin shopping list
- freshly ground black pepper shopping list
How to make it
- Heat the olive oil in a large skillet over a medium heat. Add the onion, cook until golden, about 10 minutes. Add garlic, cook another minute, or two.
- Add water, bullion and lentils. Bring to a boil, then reduce heat, cover and cook for about 30 minutes, or until lentils are soft.
- Cook spinach according to package directions. Add cooked spinach, cumin and salt to lentil mixture. Cook until everything is warmed through. Add cracked pepper to taste.
- Serve over rice.
