How to make it

  • Velveting the shrimp,combine the shrimp,egg whites,two tablespoons cornstarch,and half of the salt,cover and chill for about three hours.
  • In a warmed seasoned teapot,pour one cup boiling water over Dragon Well Tea Leaves,cover,steep for five minutes.Measure out and reserve two tablespoons tea.Drain and serve remainder for drinking...Save the leaves.
  • In well seasoned wok,heat oil over medium hight heat until smoking,add shrimp and cook until pink,about 3 minutes.
  • Drain on towel.Pour off oil and discard.Do not wipe out wok.
  • Return wok to heat,in the mean time,whisk the sherry,sugar,remaining salt,and the remaining cornstarch with two tablespoons liquid Dragon Tea,whisk all together.
  • Add to wok with the reserved Dragon Tea Leaves.Bring to a boil,add shrimp,and toss to mix,coating well.
  • Remove from the heat and serve.
