How to make it

  • Boil whole potatoes until they are just tender. Remove from water. With the palm of your hand, light smash the potatoes—just enough so that they break open, but not so much that they fall totally apart. Pour some extra virgin olive oil (EVOO) over the potatoes, and sprinkle with some salt and some fresh rosemary if you have it. Place the potatoes on a grill and grill until potatoes are lightly browned. Pour a little more EVOO over potatoes, if desired. Delish with just about anything.
