Roasted Beets With Chard

- 1 bunch beets, peeled and cut into bite-sized chunks shopping list
- olive oil shopping list
- Chard, thick rib removed and leaves roughly chopped shopping list
- salt and pepper to taste shopping list
- balsamic vinegar (optional) shopping list
- goat cheese (optional) shopping list
How to make it
- Toss beets with some olive oil and place on a cookie sheet.
- Roast in a pre-heated 350 deg. for 30 minutes.
- Toss in the chard and roast for another 10 minutes (until chard is wilted).
- Add some salt and pepper and/or balsamic vinegar to taste.
- Add goat cheese if you want some protein and added creaminess.
- Serve warm or chilled.
