How to make it

  • Toss beets with some olive oil and place on a cookie sheet.
  • Roast in a pre-heated 350 deg. for 30 minutes.
  • Toss in the chard and roast for another 10 minutes (until chard is wilted).
  • Add some salt and pepper and/or balsamic vinegar to taste.
  • Add goat cheese if you want some protein and added creaminess.
  • Serve warm or chilled.
