Anchovy Condiment (sambal Bilis)

- 100-200g dried anchovies- wash and strain. shopping list
- 2 shallots, 1 clove garlic, 1 inch shrimp paste (belacan) shopping list
- -blend together with 1/2 cup water using blender or pounded in a mortar without water. shopping list
- 6 table spoon chilly paste (can refer to 'fried vermicelli' how to make your own chilly paste). shopping list
- 1/2 cup tamarind juice shopping list
- 1 onion- slice thin shopping list
- 1 1/2 cup water shopping list
- 1 tea spoon salt shopping list
- 1 1/2 tea spoon sugar shopping list
- 2 cups oil for cooking. shopping list
How to make it
- as usual heat oil in a wok and add in the blended mixture, stir-fry until the water dry and fragrance.
- add chilly paste and stir. keep stir once a while to make sure the paste doesn't stick.
- after the chilly cooked well, where we can see its boil on the spatula, pour in the tamarind juice.
- stir and let it boil before pour in water and let it boil again.
- add salt and stir and add in the sliced onion together with anchovies.
- mix them well and let it cook for about 10 min.
- add sugar, stir and taste add more sugar and salt if not enough.
- now its ready to serve.. :)
